A great grilling fish, yellowfin tuna (also known as Ahi) has a slightly stronger flavor than albacore and is excellent when blackened for Cajun dishes. It is usually prepared seared or rare, but if you like your fish a bit more well done yellowfin will stand up just fine to higher heat.
